When they first tried 4 day work weeks in the 60s they found that production fell a little. This was because generally Mondays and Fridays aren't as productive due to employees recovering from and getting ready for the weekend. With a 4 day work week, you have one day less in the middle of the week.

depends on the business. A fancy restaurant may only be open four days a week, while mcdonalds sells by volume and is open every day. Depends on what kind of equipment is running and how it needs to be serviced, and depends on what is being produced. I dont think there is any way to compare the two, other than the hours are the same. In my line of work we work 12 hours a day, seven days a week.
