It's the best law enforcement experience you can get without either joining the police or becoming a Military MP or SP. There are some programs where citizens work on patrol to booster the police presence, but these programs teach the citizens what to look for and then to report it to the police. In an internship you may not get to bust some criminals yourself, but you get to see it happen. If you are in the station then you can attend role call to find out how the police officers are briefed and you can tour the various departments. This is all "hands on" experience and if you decide to join the police it can be very valuable for you.

I would think so, did you know that you have to pass a test if you want to be a cop, there are several books about the subject
