as far as offshore oil rig companies, who could I find a job with and is there a big demand for this kind of work: roustabout, maintainance or some other entry level work I could do to get my foot in the door?

Go to www.rigzone.com and search the Jobs section. There's plenty of work at the moment - the industry is booming in fact. Contact as many Aberdeen-based agencies and offshore contractors as possible and try and sell yourself. Good luck.
