What kind of employee does the restaurant industry look for?

I want to get my foot in the door with the restaurant business and try to become a server. What key qualities should I focus on and portray about myself?

Hard working, organized, have the ability to work under pressure, able to use your own initiative and work well as part of a team. Look smart and clean. (I want to say someone who washes their hands!) Be friendly, smile and be yourself. Also be prepared to start at the bottom, learning the ropes and work your way up.
