Having worked offshore, I would recommend a visit to the departure point to speak with the people on the ground. If you would like to work on a Cruise line, go and visit one of their main departure points with your bags packed. The list of applicants can be very long, but when they need someone, the list of people in their office with their bags packed and ready to go is usually pretty short. Take any position you can afford and then work your way to the role you want to have. There is enough turnover in the industry to allow plenty of upward mobility.

You could check with Cruise Lines or do searches for jobs in places like the Cayman Islands.
