How to teach a cooking class?

Does anyone have ideas on how to teach a cooking class? I'm Cajun and I've been invited to move to Paris to start teaching classes every Friday night. I do have a culinary education, but that was a long time ago and I'm looking for tips on how to organize the classes. Participants will get samples, then a meal will be served in the restaurant, followed by a dance with live music.

Start with hand-outs containing the name of the "dish-o'the-night" , a brief history or antedote of the dish, and a list of ingredients. When the students are assembled, introduce yourself and the dish, then proceed as if you were in your kitchen. Make sure you stop for questions, let it be a two way interaction, keeping in mind that while you hace a culinary education, others may not know what you mean by "sweating the onions" or saute. Make it fun!
