Asked by cremedelacrem281
ok so i graduated culinary school january of 06 and working in resturants sense im currently workin at a country club that is going nowhere. My mother mentioned a hotel but im not sure what to do. Im definately looking for another job but im not sure where to go to. In the grand sceme of things im still a rookie in the game and i need all the experience i can get but is it beneficial to go to a chain resturant ? I want to work at a good quality resturant i have high standards for food quality n such and places ive been dont hold the same regrad as i do .So i thought maybe it would be better to go to a place that wasent a chain . i want to go somewhere that will help my career for the better but i guess im just looking for insight from fellow line cooks and chefs .
as for chain resturants im talkin about like outback steak house , carrabba's , olive garden things like that you know i also like the stress of hecktic kitchens thats my rush i love it for some reason small places are not my thing i work in a small place now

You would be outstanding in a tucked-away nicer Bed and Breakfast inn because there you would be on your own and mistress of the entire kitchen in which to develop your own creations and reputation early in your career. Send e-mails to B&B's as you survey them on the Internet. Many mountain villages in Colorado, for example, have B&B's that hire culinary artists. They have a high turn-over because the wealthy guests who stay in those inns hire away the chefs into fabulous private well-paid service. Best of luck to you in your career.
Edit: OK. How about cruise ships, Dubai, Las Vegas, corporative dining establishments, private clubs, golf clubs, country clubs and museum restaurants?

I suggest staying away from fast food rest. I would go to a classier place or even a hotel like your mom suggested. Get your foot in the door and prove yourself.

I think you've just been proposed to:) But yes, check out the cruise lines, as that seems to be a good environment for you, if you like things fast paced. It has an added bonus of being able to travel.
