What's a good part time job for the evening?

I'm going to be going to school 2 nights per week and I'm a stay at home mom, but I would like to start working a little too. What's something that would allow me to be flexible with evening hours and pay more than minimum wage?

24-7 call centers/telemarketing. The job is easy, the pay is great and their always looking for evening people!
Also working on the Ad set team in Retail or stocking pays more than minimum wage.

24 hour grocery store or dept store that stays open late. Waitress, fast food are some that come to mind also.

Try a retail store such as Gap or Target. Any retail store is made up mostly of moms and students. On your application they will ask you for your availiability. Some stores may require you to work a weekend once in a while but you can tell them you want to be done by one or two in the afternoon so you have time to study and be with your family.
Don't do any of these work from home things. Many of them are pyramid scams. There are som work at home jobs in some of the major companies. Check out Monster, HotJobs, CraigsList etc.. for tele-commuting jobs. If you look for tele-commuting you will get legitimate jobs while work at home will give you results of these get rich quick scams.
I am not sure what your professional abckground was prior to becoming a Stay at Home Mom, but many online universities such as University of Phoenix is a great way to make some extra money. Most of the teachning positions require extensive experience, but you can log on at your leisure and grade papers, view student posts etc..

I think network marketing is a GREAT way to make extra money in the evening. Because you can work during the hours you want to work it. There's quite a few companies out there but with MPM you will never have to invest a dime. There are no monthly fees. The great thing about network marketing is that there is no limit to how much you can make where when you work for wages you can only make so much.
