I'm a cook and its time to move on, how do I find a better restaurant to cook at?
Asked by roleinthesky
I've been working at a Italian restaurant for the last 6 years (I started when I was 14). I started as a dishwasher and for about the last 4 years I've been cooking. We don't have a chef but I've become the cook with the highest sonority. Anyways I've learned just about everything I can here and I want to move on to a better restaurant, hopefully with a chef that I can learn more from. How do I find a place that is a step up? What can I expect to get with 4 years cooking experience? I don't even have a clue where to start, any help would be appreciated. I eventually would like to become a chef.

With 4 years cooking at one job, you show stability and seriousness. Any Chef would love to have someone like you with experience that they can count on for more than a few months.
I would start by identifying the best restaurants/Chefs in your area. Start with the local food critics in your local news paper.
It seems like you are someone comfortable with the written word, so I would write a letter describing your situation. Almost every Chef wants to hear that you want to learn, and that you are ambitious. Do a little research on their career, their food, and the restaurant, and work that into the letter without sounding like a kiss ass. Most info can be found on Google or other search engines.
If you don't get a response to your letters, call them about 2 weeks later. Be bold, and assertive. Call between shifts. (Roughly 2:00pm) Let them know you want to learn from the best.
Well, that's how I did it.
Good Luck!
