Are there certain certification exams restaurant workers need?

I am trying to figure out what, if any special courses you will need in the restaurant field as you move up the ladder from server to assistant manager to general manager to sous-chef to executive chef and then finally restaurant manager?
Any help would be appreciated!

for sous-chef and executive chef you will need culinary degree
for general manager many now want at least a bachelors degree in business as well as the work experience in the industry. many want a hospitality degree which covers the business side as well as operations.
