What does it take to start a career as a baker/pastry chef for coffee shops?

I just graduated with a bachelor's in an entirely unrelated field, but I love baking and making candy. Whats the fastest track to making excellent goods for shops? Do you have advice for this type of catering? If you are a baker/pastry chef, tell me everything about your experience getting to a professional status.

I can't tell from what you've written exactly what you're trying to do. Do you want to make pastries in a coffee shop, or do you want to open a business supplying pastries to coffee shops? If it's the first, you might want to take a few culinary arts classes in baking, so you can get the feeling for baking in quantity. If it's the second, you need to learn about running a business.
