I am a line cook?
Asked by sunscour
I want to take my skills to the next level and do REAL cooking. Basically I want to become a chef or head chef. How do I acheive this?
I am assuming I need to go to culinary school, but how can I better myself until then? and what can I do to be a better line cook until I can get into school.

You are on the ground floor.
When you have mastered all the stations in your current job it will be time to move to the next one. Keep moving. Every time you move to a new house you will learn new skills.
A chef is a master at the trade and the best way to become a master is to work and study. You do not need to go to school for this.
Along with moving every year to 18 months, read all the cookbooks you can get your hands on. Educate your palate with different foods and spices and don't forget to eat out!
Visit as many different restaurants as you can afford. Before you know it you too will be a chef.
BTW a line cook is a real cook but if you are not being challenged, you may want to move to a different type of cuisine.
Good Luck!!

I was a back of the house supervisor I would follow the chefs around and see what they are doing. You are basically learning free lessons, but these days you'd need a certificate or a degree to call yourself a chef or be accepted as one. I was transferred to front of the house, now I'm a lot happier.
