Can a restaurant owner be the head cook?

Can i be the president ceo and head chef/cook of a big fancy restaurant in a big city?

Absolutely but you will need a really good Dining Room Mgr. and a very good back up chef or cook just in case you can't be there. I think you will do Great as long as you serve Great food...

I would assume that you could. I used to work at a restaurant and the head cook was the owner

Yes. As owner you can take whatever position you want, be it head chef or general manager.
