I'm working the night shift at a gas station. What should I tell customers when they walk in? good night?

I would say "Hi", "Hello", or ask How they are doing?
I would tell them to "Drive safe" or to "Have a safe a trip" once departing.

"Good night" is not a greeting but said when people part.
"Good evening" can be a greeting, although it's fairly formal. How about, "Hi"?

Before greeting someone, ascertain whether or not s/he is a mugger!
Just to be safe, throw a handful of money at everyone who walks in.
I'd watch my back if I were you. Gas stations are dangerous business.

like the others- good evening I think is the best. Good night seems like more of a closing statement than a greeting.

Mmm, you should say good night when they leave or "have a good night" er something like that, I work late so I always go into stores around 10pm (ones that are open that late anyway) and they normally say something like "hi".
Just keep it simple and don't stress about that part, you'll do fine 'cause people never really notice what you say as a greeting when they're thinking about it.
