Equine is the highest overall, but will start out lower because you are "forced" into an 1-2 year internship paying very little.

Depends on your clients. Large animal vet in a depressed rural area - probably not great money. Large animal vet for racehorses - very very lucrative. Small animal vet in rural area - not great. Small animal vet in wealthy area - you'll earn bucketloads. A mixed practice might be tricky, as you'll need double the equipment if you're having to deal with both animals as large as horses and cows, and also small cats and dogs. I could see being a large animal vet, and providing basic services for housepets - referring the more complicated small animal cases to a specialist.
