Embedded systems ...

There are actually very few jobs for Assembly Language, mostly by computer manufacturers. Now-a-days, most Operating Systems, like Unix, the core of the operating system itself, called the Kernel, is written in assembly, and a mini-compiler (which is then used to compile a full featured compiler) is written in assembly and the rest is all written higher level languages.
As "Ez J" points out, embedded systems are sometimes written in assembly too (though, again, it may only be a kernel and then a compiler - actually a lot of embeded systems these days run Linux - they just don't give you any kind of interface into the O.S.). Computerized aircraft systems like radar, or say the guidence system in a missle would be some examples of some embedded systems. Most civillian type embeded systems jobs are for stuff manufactured say in China, so you may not find much demand here in the U.S.A. I suspect most of your embeded systems jobs in the U.S.A. will be working for an aircraft company or a manufacturer of military hardware. Also chip manufacturers, like Texas Instruments. Mainframes use a bit more assembly language programming than Open Systems.
As for salary, if you are good at Assembly, and you can find a job, it pays better than most Computer Science jobs, because it is so specialized.
