"Law enforcement" covers a wide range of duties and agencies. I suggest you get your students to narrow down where their interests lie. Police is the most visible law enforcement presence, they'd be in uniform and patrolling the streets. Sheriff's typically handle court and jail duties; in many areas they can also work patrol like Police. Corrections is working as a prison guard or parole officer. State Police duties vary by state but their primary responsibility is to patrol the state highways. If interested in working in a specialized law enforcement field like investigating drugs, immigration, or terrorism than they should check out the relevant agencies (drugs = DEA, immigration = ICE, terrorism = FBI). Regardless of what path they choose I suggest anyone going into law enforcement get a degree first. The Federal agencies usually require a degree. While most police, sheriff's, and correctional agencies do not require a degree having one will increase your odds of getting hired and promoted.
My own experiences in local and federal law enforcement.

I think this best way to really find out would be for the student to do ride-alongs with different agencies. Most people and sheriff departments are happy to do so. As far as state police, I know North Carolina doesn't allow ride-alongs but it is important to know that most state police are college graduates, better trained, and paid more. Good luck to you and the student!
