I am a chef from Canada, and the diploma you get from a culinary school does not necessary give you any real title, as you work and get more experience and climb the ladder within an organization, you will be working these positions.
If you attend some schools they have university level degree's, the CIA is an Associate's degree, either science or business. The program can be anything from 2-3 years and some are 4 years depending on the degree and course, more commonly it is 2 years.
In the US and Canada if you join the Chef's associations, you can write exam and get a certification for a sous chef, head chef and executive chef, these are not in some cases needed, but like a doctor or teacher the more you have the more money you will make, I wrote mine here in Canada years back, and have a certified sous chef certification.
