Say if you worked in a prison or a hospital or somethin like that?

what happens over night do the doctors and nurses...or prison guards go home or do they stay and keep an eye on things?

I'm pretty sure there are day time staff and night time staff. I would think there would be at least one or two there for prison, and for hospitals, there's always doctors and nurses on staff.

They work shifts so you have different people on duty at different times.No one is ever left without medical care or prison guards.
