Summary: Provide direction and planning for the Food Service and Catering operations to ensure quality products are prepared and served with a high level of guest service in an exemplary sanitary environment and ensure budgeted profitability levels are exceeded.

Key Duties and Responsibilities:

· Leadership of Fulltime and Seasonal Supervisory Team, Team Leads, Assistant Team Leads, and Team Members.

· Development of menus, pricing and schedules.

· Develop ideas, design and implement processes that positively impact food quality, guest service and sanitation.

· Ensure adequate staffing levels and look for operating efficiencies to reduce labor costs.

· Implement guest service program, and continually follow up with staff on service techniques.

· Audit and realign proper food preparation and handling procedure, in compliance with all Health Department and Food Service Department policies regarding sanitation.

· Continually monitor the cleanliness of all units and implement processes to accomplish this long term.

· Ensure the safety of all team members and guests and create department safety initiatives.

· Monitor food cost and develop menu items and recipes to achieve budgeted goals.

· Lead warehouse and purchasing teams to ensure that proper products are specified, procured and a proper level of inventory is maintained.

· Monitor equipment and develop programs to ensure proper maintenance.

· Interface with Finance Department regarding accounts payable and receivable, payroll, cash handling and cash control.

· Approve team member schedules to ensure that labor hours correlate with forecasted sales volume.

· Handle negotiations of branded and licensed concepts with third party operators to include menu and facility planning.

· Develop a well-trained, efficient staff, and ensure that qualified team members are available for promotion.

· Participate with Human Resources and make recommendations regarding team member hiring, promotions, and corrective action.

· Identify areas for continued improvement; develop and implement strategies to enhance these areas.

· Comply with and ensure following of all Six Flags handbook policies at all times.

· Prepare annual budgets, review and forecast performance continually throughout the year.

· Develop and monitor capital purchases and construction as required.

· Possess a great eye for detail and organization.

· Be a catalyst for implementing projects and keeping progress moving forward.

· Ability to develop and implement systems.

· Assist in parkwide projects as requested and as necessary.

· Ability to plan you work and work you plan.

· Understand and practice customer and profitability focus.

· Ability to effectively communicate.

· Have a sense of urgency in all you do and model this for you team.

· Model a can-do positive attitude and sense of pride at all times.

· Ability to multi task and keep all projects and assignments moving forward and balance all strategies to keep all at the same high level of execution.

Skills And Qualifications

· Must be willing to work 40-60 hours per week, including before and after scheduled shifts if necessary and on weekends and holidays.

· Must be professional, energetic, self-motivated, able to motivate others, and have a positive attitude.

· Professional grooming and conduct must be constantly displayed.

· Computer Skills a must – Microsoft Office (Excel, Word)

· Bachelors in Hospitality or Business Management preferred. Equivalent Experience combined with education will be considered.
