Food Service Mnaager-Skilled Nursing-San Antonio, Texas

TRISUN Care Center Windcrest , located North East of San Antonio, provides 24-hour nursing care in a warm and friendly environment. Our staff is devoted to making each and every resident feel comfortable and at home. We are looking for a full time Food Service Manager.

SUMMARY

The Food Service Supervisor has overall responsibility for the provision of a high quality dining service that takes into account resident preferences and dietary considerations in compliance with applicable food and sanitation regulations. In this capacity they organize, plan, direct, control and supervise functions and personnel within the dietary department to ensure the provision of quality food service and nutritional care.

ESSENTIAL DUTIES AND RESPONSIBILITIES

· Supervises and assists dietary staff in the production of all menu items, including using recipes with high quality ingredients, operating kitchen equipment, serving food at appropriate temperatures, portioning and garnishing.

  • Responsible for review resident food preferences and ensures diet card reflects preferences.
  • Observes tray line to ensure meal accuracy and correct portioning.
  • Conducts test tray audits at periodic intervals to ensure food is served at proper temperatures and meals are palatable and visually appealing.
  • Supervises safe food handling procedures for cooking staff with special emphasis on hazard analysis critical control points.
  • Inventories supplies daily to ensure proper stock levels for the preparation of menu items and to prepare food delivery order.
  • Monitors the labeling and proper storage of all foods. Monitors temperatures of all kitchen refrigerators, freezers, dish machines, and three (3) compartment sink.
  • Maintains the preventative maintenance program for kitchen equipment.
  • Immediately reports to maintenance any malfunction in equipment or physical plant.
  • Reviews and controls food, labor, and supply costs.
  • Controls overproduction, waste, and theft of all products.
  • Monitors use and misuse of equipment, utensils, and cleaning supplies.
  • Maintains accurate daily production records to aide in future production, purchasing, and control of expenditures.
  • Under the direction of the Registered Dietitian assists in collecting data for nutritional assessment, MDS, RAPs and development of care plans per state regulations.
  • Participates in QI programs.
  • Staffs department with capable and cooperative employees. Orients and trains new employees. Coaches and administers performance counseling as needed and annual performance evaluations..
  • Plans meal production and assigns tasks to ensure equal distribution of work and promotion of teamwork.
  • Supervises and assists staff in maintaining high standards of safety and sanitation.
  • Supervises and evaluates implementation of the “Resident’s Rights”.

SUPERVISORY RESPONSIBILITIES

All dietary aides and cooks.

EDUCATION and/or EXPERIENCE

Graduate of dietary manager training program approved by the Dietary Manager’s Association and/or State Health Department. Prefer four year or two year degree in dietetics or food service and two to three years supervisory experience in a dietary department. Must have the demonstrated ability to develop meals for special dietary needs. Must have experience in hiring and managing personnel. Must possess strong organizational and time-management skills and be willing and able to work flexible hours.

CERTIFICATES, LICENSES, REGISTRATIONS

Food Service Supervisor Certification as necessary per county requirements

Food Handlers Permit

PHYSICAL DEMANDS and WORK ENVIRONMENT

Employee is required to hear, speak, sit, stand, and walk daily. The position is located in healthcare facility environment. Employee may lift 50 plus pounds. Works in a sometimes hot, humid or cold kitchen area which may be congested and noisy during busy times. Work hazards include hot surfaces, steam, wet floors, hot oil, heavy lifting, knives, and other sharp objects, mechanical equipments, and cleaning chemicals.

Must be in good general health and demonstrate emotional stability in order to cope with the mental and emotional stress of the position. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
